Ceviche is a seafood delicacy with origins in coastal Latin American countries. The best known for their Ceviche are Ecuador, Costa Rica, Mexico, Peru, and of course Panama. Ceviche is made of various types of fish, shrimp, octopus, squid, and other seafood common to the region. Ceviche is cooked in lime and lemon juice and is commonly eaten as an appetizer before meals.
